Cadbury Egg Cookies

Whether you're a mini egg purist or someone who waits all year just to see those pastel bags hit the shelves, there is no denying that Cadbury Mini Eggs are the undisputed heavyweight champions of Easter candy. 


By why eat them by the handful when you can bake them into a soft, buttery cookie? These Cadbury Egg Cookies take everything you love about a classic chocolate cookie - crisp edges, chewy centers, and a hint of vanilla - and swap the chips for these iconic, crunchy-shelled milk chocolate eggs. 


Pro-Tip for the perfect bake: To get that "instagram-ready" look, save a handful of crushed Cadbury eggs and press them gently into the tops of the cookie dough balls right before they go into the oven. This ensures the bright colors don't get buried. 



The Recipe

INGREDIENTS

2 1/2 cups flour

1/2 cup malted milk powder

1 tsp baking powder

1 1/4 tsp kosher salt

2 tsp cornstarch

1 cup butter, melted

1 1/2 cups light brown sugar

2 eggs

1 tbsp vanilla

1 1/2 cups Cadbury Milk Chocolate Eggs, crushed

1 cup milk chocolate chips


DIRECTIONS

1. Whisk flour, malted milk powder, baking powder, salt and cornstarch together. Set aside. 

2. In the bowl of your stand mixer fitted with the paddle attachment, combine the melted butter and brown sugar on low speed. Alternatively, this can be done in a mixing bowl with a wooden spoon or rubber spatula. 

3. With the mixer still on low, add in the eggs and vanilla, and then finally the dry ingredients until evenly incorporated, scraping the sides of the bowl as necessary. 

4. Stir in crushed candy and chocolate chips. 

5. Chill dough for 2 hours or up to 3 days. 

6. Preheat the oven to 350°F. Line a baking sheet with parchment paper. 

7. Using a medium cookie scoop, drop dough onto the prepared baking sheet 3 inches apart. 

8. Bake for 11-12 minutes until the edges are golden. Don't over-bake. 

9. Allow to cool on a baking sheet for 3 minutes and then transfer to a wire rack to continue cooling. 


** Notes: If you can't find malted milk powder, it can be omitted and the cookies will still be delicious.
