Cherry White Chocolate Chip Blondies


Move over brownies, there's a new summer favorite in town. 
If you are looking for the absolute star of this weekend's BBQ, you just found it. These blondies pair the deep, buttery chew of brown sugar with fresh, jammy July cherries and decadent pockets of white chocolate. They are rich, slightly tart, completely portable, and guaranteed to disappear from the dessert table in five minutes flat. 


Recipe

INGREDIENTS

1 1/2 cups unsalted butter, softened

1 1/2 cups brown sugar

3 large eggs

2 tsp vanilla extract

4 1/2 cups unbleached all-purpose flour

1 1/2 tsp baking soda

1 tsp sea salt

3 cups cherries, pitted and diced

12 oz package white chocolate chips



INSTRUCTIONS

1. Preheat the oven to 350°F. 

2. Grease or spray a large 11x17" cookie sheet with cooking spray. 

3. In a. large bowl, combine butter, sugars, vanilla, eggs, salt and baking soda. 

4. Beat at medium speed with an electric mixer until fluffy. 

5. Stir in flour, cherries and white chocolate chips with a wooden spoon until combined. 

6. Spread and press down cookie dough into the prepared cookie sheet. 

7. Bake at 350 for 25-30 minutes, or until lightly browned and a toothpick inserted in the center comes out clean.

** Notes: After pitting and dicing the cherries, it's helpful to pat them dry with a paper towel before adding to the cookie mixture. This avoids discoloration of dough.
