French Onion Pasta

A Love Letter in a Skillet! While traditional French Onion Soup is a labor of love, this pasta version captures all that deep, umami-rich flavor in a way that feels a bit more modern and indulgent. It's cozy enough for a rainy February night, yet sophisticated enough to serve alongside your best bottle of red. This isn't just dinner; it's an experience. It's tastes like you spent hours in the kitchen (even if you were mostly just stirring) and if you're looking to skip the crowded restaurants and at the prix-fixe menus this Valentine's Day, this is the dish that will turn your dining room into a hidden Parisian bistro.

So, light the candles, dim the lights, put on your favorite jazz playlist and let's get caramelizing.

Recipe

INGREDIENTS

8 oz fettuccine pasta

3 large sweet yellow onions, thinly sliced

4 tbsp unsalted butter

1 cup low-sodium beef broth

1 cup heavy cream

1 cup grated Parmesan cheese

2 tsp fresh thyme leaves

Salt and pepper to taste

DIRECTIONS

1. Slice the onions thinly to ensure even cooking. Melt butter in a skillet over medium heat.

2. Add sliced onions and caramelize for about 20 minutes, stirring occasionally until golden brown.

3. Pour in beef broth and add fresh thyme. Let it simmer for 10 minutes to combine flavors.

4. Stir in the heavy cream and grated Parmesan until melted and creamy.

5. Cook fettuccine according to package instructions until al dente; drain and add to the sauce, tossing to coat evenly.

6. Serve hot, garnished with extra cheese or herbs if desired.
