Lisa's Carrot Cake

CARROT CAKE
INGREDIENTS
2 cups flour
2 tsp baking soda
2 tsp cinnamon
2 cups sugar
1 tsp salt
1 cup chopped nuts (optional)
2 cups grated carrots
3 eggs
1/4 cup oil
1 small can crushed pineapple
3/4 cup buttermilk
8 oz. coconut
INSTRUCTIONS
1. Preheat oven to 350°F and grease a 9x13 pan.
2. Beat eggs and add sugar, oil and buttermilk.
3. Add dry ingredients and then carrots, coconut, nuts and pineapple.
4. Bake for 55 minutes.
CREAM CHEESE FROSTING
INGREDIENTS
8 oz cream cheese
1/2 cup butter, softened
1 box powdered sugar (2 1/2 to 3 `1/2 cups)
1 tsp vanilla
1/2 cup coconut (optional)
INSTRUCTIONS
1. Beat altogether and spread on cooled carrot cake.
