Pro Tip: Keep a few tucked away in the freezer; they make for a refreshing chilled treat when you need a little midday pick-me-up!
The Recipe
INGREDIENTS
8 oz cream cheese, softened
36 mint Oreo cookies, finely crushed
12 oz white candy melts
12 oz green candy melts
St. Patrick's Day sprinkles, for topping
DIRECTIONS
1. Line a large rimmed baking sheet with parchment paper. Mix crushed mint Oreo cookies and softened cream cheese in a bowl until fully combined and smooth.
2. Scoop about 1.5 tbsp of the mixture, roll into balls, and place on the prepared sheet. Freeze for 20-30 minutes or refrigerate overnight until firm.
3. Melt white and green candy melts in separate bowls following package directions until smooth. Dip each chilled ball into the white candy, then drizzle with green coating. Add sprinkles before the coating sets.
4. Chill again for 15 minutes or until the coating hardens. Keep refrigerated until ready to serve for the best texture.
** Notes: You can freeze the balls before dipping for easier coating. Swap colors and sprinkles for other holidays or themes.
