Savory Spinach Quiche Muffins

The Recipe

INGREDIENTS


10 oz bag fresh or frozen chopped spinach

10 large eggs

2 T half and half

1/2 cup mayo

1 tsp onion powder

1 tsp garlic powder

1/2 tsp black pepper

1 tsp sea salt

2 cups shredded sharp cheddar cheese

1/2 cup grated parmesan cheese


Optional Ingredients:

Feta Cheese

Mushrooms

Bacon

Broccoli

Ham

Cherry Tomatoes

INSTRUCTIONS

1. Preheat oven to 375 degrees. 

2.Wash spinach. If frozen, put in fine mesh strainer and let thaw completely. Drain and squeeze out any liquid. 

3. In a large bowl, whisk the eggs throughly. Add the half and half, spices and mayo. Mix well. Then add the cheese and spinach. 

4. Spoon evenly in 12 silicone muffin cups. (Anything else will need to be well greased and it still may stick. You can also use muffin liners)

5. Bake for 18-20 minutes, until the eggs seem set. Allow to cool a bit then remove to cooling rack. 


You can eat right away or wait until completely cooled and store in fridge or freeze. ENJOY!
