Holiday Quiche
1 9 inch unbaked pie shell (or crustless!)
8 slices bacon cooked crisp and crumbled (Pre-cooked works best)
1/2 pound shredded swiss, cheddar, pepper jack, monterey jack or combination of any
2 ounces, grated parmesan cheese or feta, optional
2 tablespoons flour
1/2 teaspoon salt
3 eggs beaten, can add up to 6 eggs
1/2 cup milk
1/2 cup mayonnaise
1/2 cup spinach, Roma tomatoes, green onions, sauteed mushrooms, sun dried tomatoes, pesto,
diced ham. Anything you think will be good with eggs!! I never measure this, add as much or as
little as you like. For spinach I like to use frozen chopped spinach thaw and squeeze water out
Directions:
Form crust in pie dish. Bake crust for 10 minutes at 400. Remove from oven and reduce heat to
325.
Mix all ingredients together pour over crust. For crustless, grease pie dish well, then pour in
mixture. Cook 40-50 minutes or until set in middle. Let cool 15 minutes before serving.
