Savory Pumpkin Whipped Feta Dip
Recipe
INGREDIENTS
Approx. 8 oz block of feta cheese, drained from brine
1/4 cup plain greek yogurt (use a higher fat option for less tartness)
1 cup canned pumpkin puree (unsweetened)
1-2 tbsp honey
1 tsp dried thyme
Black pepper
Toppings
Fresh Thyme
Chopped walnuts
Extra honey drizzle
Serve With
Crusty, toasted bread
Crackers
INSTRUCTIONS
1. Make whipped feta by adding the feta cheese and greek yogurt to a food processor. Blend ingredients together for a few minutes until smooth, scraping down with a spatula as needed.
2. Add pumpkin puree, 1 or 2 tbsp of honey (depending on desired sweetness), thyme, and a few cracks of black pepper to the food processor. Blend again until all ingredients are combined.
3. Transfer whipped feta to the fridge and chill (covered) for 30=60 minutes. This is necessary to harden and chill the dip.
4. When you're ready to serve this recipe, transfer the whipped feta to a large bowl. Garnish with a handful of chopped walnuts (optional), a generous sprinkle of fresh thyme, an extra drizzle of honey, and more pepper.
5. Serve with crusty/toasted bread or crackers for dipping. Enjoy!

Pro Tips to Customize it
Carrie Walker shares several handy tips so you can tweak the texture, flavor, and presentation to fit whatever you're craving.
1. Adjust the tartness & creaminess: Start with a light drizzle of honey (or maple syrup) while processing. Taste as you go, and don't be stingy with the final honey drizzle right before serving to really balance out the salty feta.
2. Control the sweetness: Taste as you go, and don't be stingy with the final honey drizzle right before serving to really balance out the salty feta.
3. Chill for perfect texture: The dip can be enjoyed immediately, but letting it sit covered in the fridge for 30 to 60 minutes allows the ingredients to firm up into a rich, spreadable consistency.
4. Make-ahead friendly: Hosting a fall gathering? Make the dip a day in advance. Just hold off on adding the walnut and fresh thyme garnish until you're ready to set it out so the nuts stay perfectly crunchy.
5. Serve as crostini or dip: Pair it in a bowl with warm pita chips, crisp apple slices, or crusty baguette slices. Alternatively, slather it over toasted bread rounds, top with walnuts and thyme, and serve as ready-to-eat crostini.
