Steak Bites & Mashed Cauliflower


Tired of the same old chicken and rice? Switch it up with some steak bites and mashed cauliflower! Packed with protein and fiber, it's a complete and delicious meal. With Valentine's Day right around the corner this is the perfect meal to cook for an at home date-night. Skip the reservations and cook up a romantic evening together this Valentine's! 



Steak Bites

INGREDIENTS

Steak

Your favorite steak (preferably sirloin or tenderloin)

Kosher Salt

Butter and/or high heat oil (vegetable, avocado)


Butter sauce Ingredients:

**No need to be precise in measurements**

4 Tbsp butter

Thyme (and/or sage, tarragon, rosemary), 1-3 springs fresh or 1 tsp dried

1 medium shallot sliced in rounds

2 cloves garlic, sliced or crushed



INSTRUCTIONS

Steak Bites:

Cut steaks into 1 inch cubes. Salt well. Sear in batches over medium high, not overcrowding pan. Sear for 1-2 minutes per side. These cook much faster than a whole steak. Remove from pan. Add more oil if needed for remaining steak. When all steak bites are seared toss with butter sauce and serve immediately. 


Butter Sauce:

Add butter, thyme, shallots and garlic to a pan. Cook over medium heat until fragrant and shallot/garlic are soft, 3-5 minutes. Pour over steak.

Mashed Cauliflower

INGREDIENTS

1 head cauliflower

1/4 cup heavy cream

1/4 cup butter

1/4 cup grated Parmesan cheese

Salt and pepper


INSTRUCTIONS

Chop cauliflower coarsely, can use stems. Steam until very soft. In a deep bowl add heavy cream, butter, parmesan cheese, large pinch of salt and pepper. Blend with an immersion blender or mash by hand. Taste, add more seasoning as needed. 

**Can also use riced cauliflower fresh or frozen. I bake the frozen riced cauliflower on a baking sheet covered with foil at 400°F for around 10 minutes.check and cook longer if needed.
