Recipe
INGREDIENTS
2 medium cucumbers, very thinly sliced into rounds
1/2 medium onion, very thinly sliced (about 1/2 cup)
2/3 cup fresh parsley leaves, minced (about 3T)
1 tsp cider vinegar
1/2 cup olive oil mayo
1 clove garlic, minced (about Tbsp)
Salt & Pepper to taste
INSTRUCTIONS
1. Place cucumbers, onion, and parsley in a large mixing bowl. Stir with a rubber scraper to combine.
2. In a small bowl, mix the vinegar, mayo and garlic lightly with a fork until combined.
3. Pour over cucumbers and gently fold until evenly coated. Season with salt & pepper.
