Mexican Street Corn
Get ready to take your side of corn to the next level! This stuff is so good and hands-down the best side dish for a Mexican dinner. Exact ratios are tough to dial in- it depends on how much corn you have and how big the cobs are. It's more about the list of ingredients and combining them in the desired amounts.
Recipe
INGREDIENTS
6-10 whole or half cobs of corn
6 tbsp butter
6 tbsp Mayonnaise
1/2 tsp garlic powder
1/2-1 tsp Tajin seasoning
1 cup cotija cheese, grated
Sliced limes (a wedge per cob)
CHEESY DORITO SEASONING
1 tsp onion powder
1 tsp garlic powder
1 tsp cumin
1 tsp smoked paprika
1 tsp chili powder
1/2 tsp kosher salt
2 tbsp grated parmesan cheese
INSTRUCTIONS
1. Make the Cheese Dorito Seasoning by combining all ingredients in a small bowl.
2. Cook corn by preferred method.
3. Melt the butter in a small bowl and stir in the mayonnaise, garlic powder and Tajin.
4. Roll cobs in the cotija cheese, sprinkle them with the Cheesy Dorito Seasoning and serve with the lime wedge.
