Parmesan or Pecorino Romano or Goat cheese
Pecans or Sliced Almond
Arugula
Spinach or Mixed Greens
Fresh lemon juice
Olive oil

Instructions
Roasted Grapes
Preheat oven to 425. Line baking sheet with parchment paper. Put grapes in middle of baking sheet, toss with oil and salt and spread in single layer on pan. Roast for 15-20 minutes until grapes are soft and a few have burst.
Salad
Shave parm/pecorino with a vegetable peeler. Toss ingredients together. Drizzle with olive oil, grape juice from roasting, salt, pepper and juice of a lemon. Taste and adjust seasoning as needed.
