Mushroom Burger
As the sun warms our faces and the days lengthen, our taste buds crave a shift away from heavy winter fare. Fire up the grill for the unofficial start of summer with a recipe that's both juicy and satisfying: the mushroom swiss burger. It's time to ditch the boring burgers, and get ready to embrace the season's bounty with the most flavorful mushroom hamburger recipe you've ever tried.
The Recipe
INGREDIENTS
MUSHROOMS
2 tablespoons unsalted butter
2 tablespoons olive oil
1 pound sliced baby bella mushrooms, or sliced white button mushrooms
1 tablespoon worcestershire sauce
¼ cup beef broth
1 teaspoon minced garlic cloves
1 teaspoon black pepper
BURGERS
1 pound ground beef, 80/20
1 tablespoon steak seasoning, click link for the recipe
1 teaspoon worcestershire sauce
4 slices swiss cheese
4 hamburger buns, recommended: brioche buns
Instructions
SAUTEED MUSHROOMS
Prepare the mushrooms by adding the butter and olive oil to a large skillet on the stove over medium-high heat.
Once the butter has melted, add the mushrooms and worcestershire sauce to the skillet, stir to combine everything in the skillet, then cook for 5 minutes without stirring.
After 5 minutes, add the broth to the skillet and allow it to evaporate, this will take approximately 8-10 minutes.
Once almost all of the liquid has cooked out of the skillet, add the minced garlic and black pepper to the skillet with the mushrooms.
Cook for an additional 3-4 minutes, remove from the heat and set aside.
BURGERS
Prepare the burger patties by combining the ground beef, steak seasoning and worcestershire sauce in a large bowl. Form into four 4 ounce patties.
Heat a grill to medium-high heat.
Once the grill is hot, add the burgers and grill for 4-5 minutes per side.
During the last 1-2 minutes of cooking time, place a piece of swiss cheese on each burger patty.
Place the buns on the grill to toast.
Remove the burgers from the grill and allow them to rest on a cutting board for 3-5 minutes before placing them on the buns.
Place the burgers on the toasted buns, top with the sauteed mushrooms and add any other optional toppings of your choice.
**BONUS**
These easy carmelized onions are a great addition to the burgers.
INGREDIENTS
3 tablespoons butter, or olive oil
3 pounds onions, cut into ¼ inch slices, or diced into ¼ inch squares
½ teaspoon sea salt
INSTRUCTIONS
Add the butter (or olive oil) to a 12 inch (or larger) cast iron skillet on the stove over medium high heat.
Once the butter is melted, add the onions and spread them out evenly in the skillet.
Cook for 5 minutes, sprinkle the salt over the onions, then reduce the heat to medium.
Cook for 45-60 minutes, stirring every 10 minutes.
If the onions start to stick to the bottom of the pan, lower the heat to medium-low.
Use the onions immediately, or store in the refrigerator for up to one week.
