The Recipe
INGREDIENTS
1 pound large (21-25 count) raw shrimp, shells off tails (can use smaller shrimp)
2 tablespoons extra virgin olive oil
3 tablespoons butter
Salt
4 cloves garlic, slivered, or 1 tablespoon minced garlic
1/4 to 1/2 teaspoon red pepper flakes (less or more to taste)
1/2 cup white wine or broth or mix broth and white grape juice
Finely chopped parsley
Fresh ground black pepper
Juice of 1/2 lemon, more to taste
INSTRUCTIONS
In a large saute pan over medium heat add butter, olive oil, garlic and red pepper flakes. Cook for a minute until lightly brown and fragrant. Add shrimp and wine/broth. Bring to a boil and cook for 2 minutes. Turn shrimp over and cook on high for 1 minute. Turn off heat. Add parsley, lemon juice and pepper. Toss to coat.
Serve immediately with pasta, rice, bread, sautéed spinach or as is.
** Option: Add in a splash of heavy cream at the end.
