Smoked Chicken + Caesar Salad
Craving a crowd pleasing meal that's easy to make? Look no further! In todays blog, I'll be sharing a delicious recipe for smoked chicken and caesar salad - perfect for busy weeknights or a light and refreshing lunch.
The Recipe
Place your favorite poultry rub all over the legs, place in smoker at 300* and cook till internal temp is 185*. It takes about 2 hours, depending on how many you’re cooking. Cooking them at the higher temp and longer creates somewhat of a crisp outer on the legs. Remember to smoke legs and thighs with skin on. When trying to smoke skinless chicken, it tends to dry out fast.
Caesar Salad
INGREDIENTS
Caesar Salad Dressing
2 tablespoons lemon juice
1 teaspoon worcestershire sauce
1 teaspoon Dijon Mustard
1 teaspoon anchovy paste
1 clove garlic minced
salt & pepper to taste
1 cup mayo
½ cup Parmesan cheese
Caesar Salad
1 head romaine lettuce chopped
Parmesan cheese grated
croutons
Instructions
1. Using a small mixing bowl, combine 2 tablespoon of lemon juice, 1 teaspoon of worcestershire sauce, 1 teaspoon of Dijon mustard, 1 teaspoon of anchovy paste, 1 minced garlic clove, salt and pepper to taste. Give it a good whisk until everything is combined.
2. Into the same bowl add 1 cup of mayo and ½ cup grated Parmesan cheese. Whisk until everything is combined.
3. Place romaine lettuce onto a salad plate, drizzle salad dressing over the top, garnish with grated Parmesan cheese and croutons. This is optional: sprinkle black pepper over the top for final touch. Enjoy!
