Have you ever wondered how to cook the perfect steak!? Today we are going to share our tried and true recipe with you, along with a delicious side to go with it. Fancy up your weekend plans with these recipes!

Steak Recipe

INGREDIENTS

Your favorite steak

Kosher Salt

Butter and/or high heat oil (vegetable or avocado)

Butter Sauce

**No need to be precise in the measurements**

4 TBS Butter

Thyme (and/or sage, tarragon, rosemary), 1-3 sprigs fresh or 1 tsp dried

1 medium Shallot sliced in rounds

2 cloves Garlic, sliced or crushed

Instructions

Let steak sit and come to room temperature. Salt liberally, make it look like it's wearing a wet

white t-shirt.

Heat pan over medium high add butter and oil to pan. Sear steak over medium high heat 3-6

minutes per side depending on thickness and desired doneness.

Remove from pan.

Wipe out any burned bits with paper towel. Add a few tbs of butter, tyme, shallot and garlic.

Cook over medium heat until fragrant and shallot/garlic are soft, 3-5 minutes. Pour over steak.

**Can make butter sauce in separate pan, put everything in pan and melt over low while cooking

steak.

Steak Bites — works great for a crowd/party

For bites, cut steaks (preferable top sirloin or splurge on tenderloin) into 1 inch cubes. Salt well.

Sear in batches over medium high, not overcrowding pan. Sear for 1-2 minutes per side. These

cook much faster than a whole steak. Remove from pan. Add more oil if needed for remaining

steak. When all steak bites are seared toss with herbed butter and serve immediately.

Mashed Cauliflower

INGREDIENTS

1 head Cauliflower

1⁄4 cup Heavy Cream

1⁄4 cup butter

1⁄4 cup grated Parmesan Cheese

Salt and Pepper

INSTRUCTIONS

Chop cauliflower coarsely, can use stems. Steam until very soft. In a deep bowl add heavy

cream, butter, parmesan cheese, large pinch salt and pepper. Blend with an immersion blender

or mash by hand. Taste, add more seasonings as needed.

**can also use riced cauliflower fresh or frozen. I bake the frozen riced cauliflower on a baking

sheet covered with foil at 400 for around 10 minutes. Check and cook longer if needed.

Enjoy!!!
